- Boil potatoes:
Wash the potatoes thoroughly and cut them into even pieces (with or without the skin, depending on your preference).
In a pot of lightly salted water, cook the potatoes for about 10-15 minutes, until soft but still firm.
- Heat butter or olive oil:
Heat the butter or olive oil in a pan over medium heat.
- Fry potatoes:
Add the cooked potatoes to the pan and fry until golden brown, turning occasionally.
- Seasoning:
Season with salt and pepper and mix well.
- Add parsley:
Just before serving, sprinkle the chopped parsley over the potatoes and fold in.
Serve:
The potatoes with parsley are a great side dish to meat, fish or vegetable dishes and can also be enjoyed as a light main course.
